I ...Girlie - I'm not a fan of really smooth grits. I use stone ground grits when I make them at home. They have a chewier texture and are nuttier in flavor. Something I really like. With the addition of cheese, how could they be bad!<BR/><BR/>Beth - it's definitely something you should try...I mean, the shrimp and sauce would be great tossed with a pasta! <BR/><BR/>Additionally, if you're a little fearful of the grits and the creamy consistency, you could make them and then spread them out on a jelly roll pan. Put them in the fridge to set up - probably would want to make the grits the day before. The cut our squares or whatever shape floats your boat and then pan fry them in a little olive oil. That way you get the crispy crunchy outside with the creamy cheesey inside.
